Mauby
Served Throughout the Caribbean

Ingredients

Mauby2 to 3 cups water
1 sprig Anise (fresh) or 1 tsp anise seeds
1 pk mauby bark (3/4 oz)
1 to 2 cups brown sugar
1 - 2 slices lime (optional)
Additional water to taste

Instructions

Place the mauby bark and 1 cup brown sugar in 2 to 3 cups of water, bring water to a boil, during the boiling process, add the anise. The water will boil to a syrup like consistency.
The mauby at this point will be bitter-sweet, but more bitter than sweet. Mauby bark is naturally bitter, adding sugar is what makes it palatable.
Once this mixture cools, add more water and sugar to taste.
If you prefer a sweeter taste, add more sugar, for a more bitter tinge, add less sugar.Adding water also dilutes the taste and bitterness of the mauby, therefore be careful not to add too much water all at once.
The ratio is approximately 4 - 6 cups of water and 1-2 cups of sugar for each 3/4 to 1 oz of mauby bark,
Add your sliced lime at this point (optional), pour the mauby into your favorite jug or bottle, refrigerate and serve chilled.
 
Mauby is an excellent blood purifier and a refreshing beverage served through out the Caribbean and especially during the Holidays.
